Persimmon Spice Smoothie
Prep time: 5 minutes, makes 5 cups
- 4 cups kefir or plain yogurt
- 2 persimmons, peeled & quartered (no need to peel if using a high-speed blender like a vita-mix)
- 1/4 cup honey
- 2 teaspoons ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger

This was delicious!!!! I got persimmons in my CSA box & I wanted to use them in something besides a baked good. This recipe is a keeper. It's a wonderful autumnal smoothie!!!

I haven't been able to make persimmons in a way that I really like (my other recipes all had you cook them) but this was the perfect way to use those 2 guys that have been sitting on my counter for over a week. I only had about 2 1/2 cups of plain yogurt left and it still turned out wonderful! I think you are a magician, Katie!
