There are oh so many reasons why I love this recipe. Besides the gentle, pleasing taste and angel food cake likeness of the texture, these lovelies are quick to make and the clean-up is a breeze. Oh, and they freeze beautifully, so they are being added to my freezer inventory before baby comes (in about three weeks! Eek!). Some of my kids don't enjoy other recipes I've made with coconut flour, but all four of them (and Jeremy!) enjoy these muffins. Victory!
It almost feels wrong to call them muffins because they are so cake-like, but I don't want to feel badly about eating them for breakfast, so they are muffins. However, if you top them with your favorite vanilla frosting and maybe decorate them with a sprinkling of finely grated orange zest, they would make amazing cupcakes.
Grain Free Orange Muffins
Prep time: 5 minutes, bake time: 25 minutes, makes 24 muffins
- 8 eggs
- zest from one orange
- 2 oranges, peeled
- 1 cup milk
- 1/2 cup ghee or butter
- 1/4 cup coconut oil
- 1/2 cup rapadura, sucanat, coconut or date sugar (the last 2 options make this recipe GAPS-friendly)
- 2 tablespoons vanilla extract or 2 vanilla beans
- 1 cup coconut flour
- 1 teaspoon Celtic sea salt
- 1 teaspoon non-aluminum baking powder
- 1 teaspoon baking soda
- Preheat oven to 350ยบ. Grease muffin cups or use muffin liners. Place all ingredients in blender and blend on high for 45-60 seconds, or until well blended. If it still doesn't look completely mixed, give it a stir with a spoon.
- Pour batter into muffin pans about 2/3 of the way full. Bake for 25 minutes.
how do you think it would taste with whole wheat pastry flour? we aren't gluten-free and don't have coconut flour, but i have the rest of the ingredients and orange muffins just sound like a great treat.

Coconut flour is a whole different animal than wheat. I'd look for another orange muffin recipe using wheat flour. You'll need more flour and less eggs.
ReplyDeleteFinally stocked up on coconut flour again and am excited to try these! I don't have a vitamix so I am wondering, should I juice the oranges first (I do have a juicer)? I am going to blend everything else up in the food processor but I don't know if it will get the oranges the right consistency...I guess I am assuming you have a vitamix or blentec because I seem to be the only lame one without one :) Thanks!

ReplyDeleteYes! I've been frustrated with the same thing (GF recipes that make a measly amount of muffins). I'm glad you like the bulk recipe, too. :)
ReplyDeleteI do use a Vita-Mix, so I would recommend using orange juice instead of whole (peeled) oranges if you're using a basic blender, unless you won't mind little bits of chunkies in your muffins.
ReplyDeleteOkay, so I didn't read the comments and I made this in my Magimix with whole oranges... It turned out GREAT! The chunky bits of orange are delicious!

These were amazing!!! I don't have a vitamix but I blended all the oranges up with all the liquid first until they were blended. Then I added the dry ingredients. They turned out wonderful and no chucks to speak of. Thanks for posting this!

ReplyDeleteThey had a nice light flavor. I must have done something wrong, though... they didn't taste much like orange, and the texture seemed off to me. (They were in the oven 35 minutes before they could come out of the pans without crumbling to pieces, and the bottoms were very soggy.) They definitely didn't look like your picture.
