Mama Scarborough's Brownies
You will need:
For the Brownies
4 oz. unsweetened chocolate
2/3 cup butter
2 cups sugar (I use rapadura if I'm making them for people who share my love of nutrition)
4 eggs
1 teaspoon vanilla
1 1/4 flour (use spelt if you're hardcore healthy. Then again, if you're hardcore healthy, you're probably ignoring this recipe altogether. Oh well. Just live a little. Um. Back to the recipe...)
1 teaspoon baking powder
1 teaspoon salt
Heat oven to 350 degrees. Grease 9x13x2 baking pan. Melt chocolate and butter in large saucepan over low heat. Remove from heat.
Mix in sugar, eggs, and vanilla.
Stir in remaining ingredients and spread in pan.
Bake about 30 minutes. Do not over-bake. Gooey brownies are the best.
Cool slightly, then frost.
Fudge Frosting
1 cup sugar
5 Tablespoons butter
1/3 cup milk
1 cup chocolate chips
Combine sugar, butter, and milk in saucepan. Bring to a boil and stir constantly for 1 minute.
Remove from heat. Stir in chocolate chips till smooth. Pour over partially cooled brownies.

ReplyDeleteMy mom used to frost brownies--sometimes--and those were my favorites. My husband actually prefers brownies with no frosting (go figure), so that's how I make them now.
